Amaranth Leaves and Coconut Milk Curry Recipe

Mulai Keerai (Amaranth Leaves)
Mulai Keerai (Amaranth Leaves) – 300 gms, washed and chopped
Oil – 3 tblsp
Mustard Seeds – 2 tsp
Onions – 2, chopped
Ginger – 2 two inch piece, chopped
Green Chillies – 10, medium, chopped
Curry Leaves – handful
Pepper Powder – 2 tsp
Salt as per taste
Coconut Milk – 2 cups, thick

1. Heat oil in a pan over moderate heat.
2. Fry the mustard seeds till they start to splutter.
3. Add the chopped onions, ginger, green chillies and curry leaves.
4. Fry till onions turn translucent.
5. Add the chopped keerai, pepper powder and salt.
6. Cover the pan with a lid and reduce low heat.
7. Cook for 5 minutes till the keerai is tender.
8. Add the coconut milk and cook for 2 to 3 minutes more.
9. Remove and serve hot.
