Curried Chicken Salad

Curried Chicken Salad
Chicken Breasts – 2 1/2 cups, cooked and cubed
Almonds – 1/4 cup, sliced, toasted
Plain Yogurt – 1/2 cup
Mayonnaise – 2 tblsp
Curry Powder – 1 tsp
Red Grapes – 1 cup, halved
Coriander Leaves – 1/4 cup
Salt as per taste
Black Pepper Powder as per taste
Salad Leaves – 3 to 4 cups
Lemon Wedges – 4

1. Mix the yogurt, mayonnaise and curry powder in a bowl.
2. Add the chicken cubes, grapes and coriander leaves.
3. Add salt and pepper.
4. To serve, arrange the salad leaves on a plate.
5. Spoon 2 to 3 tblsp of the chicken salad on top.
6. Sprinkle with toasted almonds and squeeze the lemon juice just before serving.
