Ingredients:
Potatoes – 6, cut lengthwise
Onions – 4, chopped
Green Chillies – 10 to 12, cut lengthwise
Ginger – 2 two inch piece, julienned
Butter – 2 to 3 tblsp
Coconut Milk – 2 cups (1 thick and 1 thin)
Curry Leaves – handful
Salt as per taste
Method:
1. Boil all the vegetables with salt in a pan.
2. Drain excess water.
3. Add the thin coconut milk and boil again.
4. Add the thick coconut milk, reduce flame and allow it to boil.
5. When the broth starts bubbling, remove the pan from the fire before it starts boiling.
6. Garnish with butter and curry leaves.
7. Serve hot with idli and dosas.
