Carrot Ginger Soup Recipe

A tasty and creamy soup.

Carrot Ginger Soup
Carrot – 4 cups, chopped
Potato – 2 cups, diced
Ginger – 1 tblsp, grated
Water – 4 cups
Orange Juice – 1 cup
Sea Salt – 1 tsp
Onion – 1 cup, chopped
Oil – 1 tblsp
Nutmeg Powder – 1/2 tsp
Cinnamon Powder – 1/4 tsp
Cumin Powder – 1/4 tsp
Black Pepper Powder as per taste

1. Heat oil in a large pan.
2. Add onions, reduce heat to medium and saute for 10 minutes.
3. Add all the other ingredients and cover with a lid.
4. Bring to a boil.
5. Reduce heat to low and simmer for about 30 minutes.
6. Remove and blend to a puree until carrots and potatoes are slightly chunky.
7. Transfer to a serving bowl.
8. Serve garnished with a dash of cream and chopped basil/mint leaves.
