Ingredients:
Chicken Breast – 350 gms, skinless, boneless, cut into 1 inch strips
Garlic – 3 cloves, crushed
Sesame Oil – 1 tblsp
Ginger Root – 1 tblsp, minced
Broccoli Florets – 2 cups
Red Capsicum – 1 cup, cut into strips
Mango – 1, peeled, diced
Orange Juice – 2 tblsp
Red Chilli Flakes – a pinch
Cashewnuts – 2 tblsp
Basmati Rice – 2 cups, cooked
Method:
1. Heat oil in a pan over medium heat.
2. Saute the chicken strips until brown, about 12 minutes.
3. Add garlic and ginger.
4. Cook for another minute.
5. Add broccoli florets and saute for 5 minutes.
6. Add the capsicum, mango, orange juice, chilli flakes and cashewnuts.
7. Saute for 2 minutes.
8. Transfer to a serving bowl.
9. Serve warm over cooked rice.
