Brinjal Rice Patties Recipe

Ingredients:
Brinjals – 2 to 3, peeled, boiled and mashed
Plain Rice – 3/4 cup, cooked
Egg – 1
Maida – 2 tblsp
Black Pepper Powder – 1/4 tsp
Salt – 1/2 tsp
Red Pepper Sauce – few drops
Onion – 2 tblsp, grated
Cheddar Cheese – 1/2 cup, grated
Oil for frying

Method:
1. Mix all the ingredients, except oil, with the mashed brinjal.
2. Cover and keep it in the fridge for 60 minutes.
3. Divide the mixture equally and shape into a patty (like a cutlet or masala vadai)
4. Heat oil in a heavy pan till hot.
5. Deep fry the patties until crispy on both sides.
6. Remove and drain.
7. Serve with tomato ketchup.

A tasty evening snack is ready.
