Eggless Egg Salad Recipe

Eggless Mayonnaise – 4 tblsp
Sweet Pickle Relish – 2 tblsp
White Vinegar – 2 tblsp
Mustard Paste – 2 tsp
Sugar – 2 tsp
Turmeric Powder – 1 tsp
Dill Leaves – 1/2 tsp
Parsley – 2 tblsp
Tofu – 900 gms, firm, sliced, drained
Onion – 2 tblsp, minced
Celery – 4 tblsp, minced
Salt as per taste
Black Pepper Powder  as per taste

1. Mix the eggless mayonnaise, sweet pickle relish, vinegar, mustard, sugar, turmeric powder, dill leaves and parsley.
2. Mix well and keep aside.
3. Break the tofu in a bowl with a fork.
4. Add the minced onion and celery.
5. Add the mayonnaise mixture along with salt and pepper.
6. Keep it in the fridge for a few hours.
7. Remove and serve with toast and tomato slices.
