Cauliflower and Brinjal Curry Recipe

Cauliflower Florets
Cauliflower – 1, small, cut into florets
Brinjals – 3, sliced
Peas – 1 cup
Tomato – 1 cup, chopped
Coriander – 1 1/2 cup, chopped
Coriander Powder – 1/4 tsp
Jeera – 1/2 tblsp
Green Chillies – 2, finely chopped
Oil – 2 tblsp
Salt as per taste

1. Steam cook the cauliflower florets.
2. Heat oil in a pan.
3. Cook the brinjals for 2 to 3 minutes on low heat.
4. Add the peas and fry for 2 minutes.
5. Add tomatoes.
6. Add the steamed cauliflower florets and salt as per taste.
7. Stir well and add the green chillies, jeera, coriander powder and leaves.
8. Serve hot with rice or roti.
