Deep-fried Stuffed Crab in the Shell

Ingredients:
Crab Shells – 4, for stuffing
Eggs – 3, well beaten
Oil – 5 cups, for deep frying
Coriander Leaves – 1 tblsp, minced
Red Chillies – 2, for garnish

For Stuffing:
Pork – 175 gms, ground (optional)
Shrimp – 1/2 cup, minced
Crabmeat – 1/2 cup
Onion – 1 tblsp, finely chopped
Spring Onions – 1 tblsp, minced
White Pepper Powder – 1 tsp
Sugar – 1 tsp
Soy Sauce – 1/4 tsp
Salt – 1/4 tsp

Method:
1. Mix all the stuffing inngredients.
2. Fill the crab shells with this.
3. Heat oil in a deep frying pan.
4. Dip the stuffed crabs in the beaten egg.
5. Deep fry for about 10 to 15 minutes until cooked.
6. Remove and drain.
7. Garnish with coriander leaves and red chillies.
8. Serve.
