Spinach and Yogurt Salad Recipe

Spinach Leaves – 450 gms, washed, drained, thick stems removed
Plain Yogurt – 1 cup
Garlic – 2 cloves, crushed
Sugar – 3 tsp
Salt as per taste
Pepper as per taste
Extra-Virgin Olive Oil – 2 tblsp
Juice of 1/2 Lemon

1. Put the spinach leaves in a large pan.
2. Cover and keep over low heat until the leaves are very soft.
3. Drain any water and cool.
4. Squeeze out the excess water, if any, and chop the leaves into small pieces.
5. Transfer to a bowl.
6. Add all the other ingredients and mix well.
7. Serve.
