Ingredients:
Dried Shrimp Paste – 1 tsp, roasted
Cumin Seeds – 1 tsp
Coriander Seeds – 1 tblsp
Green Chillies – 10
Garlic – 3 cloves, sliced
Galangal – 1 tsp, sliced
Kaffir Lime Rind – 1 1/2 tsp, grated
Coriander Root – 1 tsp, chopped
Black Peppercorns – 5
Salt – 1 tsp
Method:
1. Fry the coriander and cumin seeds in a pan over low heat for 4 to 5 minutes.
2. Remove and grind to a powder.
3. Add the other ingredients except shrimp paste.
4. Grind for 20 seconds.
5. Add the shrimp paste and grind again till a fine curry paste is obtained.
