Thai Red Curry Paste

Coriander Seeds – 1 tblsp
Cumin Seeds – 1 tsp
Dried Red Chillies – 5, slit lengthwise, deseeded and soaked in hot water for 15 minutes
Small Onions – 3 tblsp, sliced
Garlic – 8 cloves, crushed
Galangal – 3 thin slices
Kaffir Lime Rind – 2 tsp
Coriander Root – 1 tblsp, chopped
Black Peppercorns – 10
Dried Shrimp Paste – 1 tsp

1. Fry the coriander and cumin seeds in a pan over low heat for about 5 minutes.
2. Remove and grind to a powder.
3. Add the other ingredients, except shrimp paste, and grind well.
4. Add the shrimp paste to the blender and grind again till a fine curry paste is obtained.
