Prawn Chili Paste


Vegetable Oil – 125 ml
Small Onions – 8, sliced
Garlic – 6 cloves, sliced
Dried Prawns – 1 cup
Dried Chillies – 1 1/2 cups, cut roughly
Palm Sugar – 1 tblsp
Fish Sauce – 3 tblsp
Tamarind Extract – 2 1/2 tblsp

1. Heat the oil in a pan.
2. Fry the small onions and garlic until golden brown.
3. Remove and keep aside.
4. Add the dried prawns and chillies.
5. Fry until golden brown.
6. Remove and keep aside.
7. Process the small onions, garlic, prawns, chillies and palm sugar with a little oil in a blender.
8. Add the fish sauce, tamarind extract and salt.
9. Blend again.
10. Remove and transfer to a storing jar.
11. Use as required.
