Lamb Chops in a Fruit Sauce


Lamb Chops – 8
Butter – 50 gms
Water – 300 ml
Salt – 1 tsp
Black Pepper – 1/4 tsp
Cinnamon – 1/2 tsp
Garam Masala Powder – 1/2 tsp
Raisins – 75 gms
Dried Apricots – 175 gms, soaked overnight in cold water and drained

1. Melt the butter in a large pan.
2. Add the lamb chops and fry for a few minutes until browned on both sides.
3. Remove most of the fat and add all the remaining ingredients.
4. Bring to the boil and reduce heat to low.
5. Cover and simmer for 45 minutes or until the chops are tender.
6. Stir occcasionally to prevent sticking.
7. Spoon the chops and fruit sauce over a bed of pulao or plain rice.
8. Serve at once.
