Lamb Chops in Wine Recipe

Lamb Chops – 8, excess fat trimmed
Butter – 40 gms
Mushrooms – 225 gms, thinly sliced
Garlic – 1 clove, crushed
Salt – 1 tsp
Black Pepper – 1/4 tsp
Tomatoes – 2, large, blanched, peeled, chopped
Basil Leaves – 1/4 tsp
Oregano – 1/4 tsp
Dry White Wine – 100 ml

1. Cook the lamb chops in their own fat juices in a large pan for 5 minutes.
2. Turn several times until browned on both sides.
3. Remove and keep warm.
4. Add butter to the pan.
5. Add the mushrooms and garlic.
6. Fry for 5 minutes stirring frequently.
7. Return the chops to the pan.
8. Add the remaining ingredients and mix well.
9. Cover the pan and simmer for 45 minutes or until the chops are tender.
10. Serve with plain rice and salad of choice.
