Grilled Vegetable Skewers Recipe

Capsicum – 2, cut into 1 inch squares
Zucchini – 2, cut into 1 inch cubes
Leeks – 2, cut diagonally into 1 inch pieces
Mushrooms – 12, large, stems removed
Bamboo Skewers – 12, soaked in water for 30 minutes

For the Marinade:
Soy Sauce – 1 tblsp
Vegetable Oil – 1 tblsp
Dark Sesame Oil – 1 tsp
Sugar – 1 tsp

1. Mix the marinade ingredients in a bowl.
2. Stir until sugar has dissolved.
3. Thread the vegetables onto skewers.
4. Place the skewers in a shallow tray and pour the marinade over.
5. Turn to evenly coat.
6. Allow it to marinate for 3 hours in the fridge.
7. Grill the vegetables over medium-high heat for about 5 to 10 minutes, basting with the leftover marinade.
8. Remove and serve hot.
