Brinjal with Cheese Recipe

Brinjals – 2
Lemon Juice – 1 tblsp
Butter – 25 gms
Flour – 2 tblsp
Hot Milk – 6 tblsp
Cheese – 3 tblsp, grated
Salt – 1 tsp
Red Chilli Powder – 1/2 tsp

1. Make 2 to 3 slits in each brinjal.
2. Cook them in a hot oven or under the grill until the skins are black and flesh is soft.
3. Remove and cool.
4. Peel the skins and mash the flesh in a pan.
5. Add lemon juice and simmer over low heat for 5 minutes.
6. In another pan melt the butter.
7. Add flour and cook until it turns golden brown.
8. Add this to the brinjal and gradually add the milk until the mixture is creamy.
9. Add the cheese, salt and red chilli powder.
10. Cook for 2 minutes until it forms a thick puree.
11. Serve.
