Chilli Bean Soup

Ingredients:
vegetable Oil – 2 tblsp
Onions – 2, thinly sliced
Garlic – 2 cloves, minced
Green Capsicum – 2, seeded, finely chopped
Spring Onions – 2, sliced
Tomato Puree – 1 cup
Kidney Beans – 1 cup, presoaked and cooked
Chilli Sauce – 1/8 tsp
Sugar – 1 tsp
Vegetable Stock – 1 cup
Salt – 1/2 tsp
Ripe Tomatoes – 2, chopped
Parmesan Cheese – 1 tblsp, grated

Method:
1. Heat oil in a pan.
2. Add the onions, garlic, capsicum and spring onions.
3. Saute for 4 to 5 minutes until tender.
4. Add the tomato puree, kidney beans, chilli sauce, sugar, stock and salt.
5. Simmer for 15 minutes over medium heat.
6. Add the chopped tomatoes and simmer for 2 more minutes.
7. Garnish with grated cheese.
8. Serve hot.
