Spicy Green Pea Soup Recipe

Onion – 1, thinly sliced
Green Peas – 750 to 900 gms, shelled
Extra Virgin Olive Oil – 1 tblsp
Curry Powder – 1/2 tsp
Ground Cumin – 1/2 tsp
Ground Black Pepper – 1/2 tsp
Vegetable Stock – 3 cups
Salt as per taste
Lime Juice – 2 tblsp
Coriander Leaves – 2 tblsp, chopped, to garnish
Cream – 1/4 cup, to garnish

1. Heat oil in a pan.
2. Saute the onions for 2 minutes.
3. Add the green peas, curry powder, cumin, pepper and stock.
4. Bring to a boil and reduce the heat.
5. Simmer for 15 to 20 minutes until the peas are tender.
6. Blend the mixture to a pureed and transfer to a pan.
7. Add salt and lime juice.
8. Simmer for 5 minutes.
9. Garnish with coriander leaves and Serve with a swirl of cream on top.
