Creamy Corn on Toast Recipe

Vegetable Oil – 1 tblsp
Onion – 1, chopped
Jalapeno (or Green Chillies) – 2, chopped
Capsicum – 1, seeded, chopped
Sweet Corn Kernels – 1 cup, lightly pureed
Tomato – 1, chopped
Lime Juice – 1 tblsp
Salt as per taste
Bread Slices – 8

1. Heat oil in a pan.
2. Saute the onion, jalapeno and capsicum for 4 minutes.
3. Add the corn, tomato, lime juice and salt.
4. Allow it to simmer for 5 minutes over medium heat.
5. Once the corn is tender, remove and transfer to a bowl.
6. Spread the corn mixture on 4 slices of bread and cover with the remaining.
7. Serve hot with ketchup.
