Ingredients:
Virgin Olive Oil – 1 tblsp
Onion – 1, finely chopped
Jalapeno – 2, chopped, seeded
Button Mushrooms – 250 gms, washed and thinly sliced
Tomato – 1, ripe, chopped
Chilli Powder – a pinch
Coriander Powder – a pinch
Cumin Powder – a pinch
Salt as per taste
Bread Slices – 8, toasted
Method:
1. Heat oil in a large pan.
2. Add onions and jalapeno.
3. Saute for 3 to 4 minutes, until the onion is soft and translucent.
4. Add the mushrooms and tomato.
5. Cook till the mushrooms are soft.
6. Add the chilli powder, coriander powder, cumin powder and salt.
7. Saute for a minute or two.
8. Spread the mushroom-tomato mixture on 4 slices of toasted bread.
9. Cover with the remaining 4 slices.
10. Cut into triangles and serve with ketchup.
