Mango Biryani Recipe

Green Mango – 200 gms, cut into thin strips
Sweet Mango – 300 gms, cut into thin strips
Rice – 2 cups, soaked for 30 minutes and drained
Ghee – 2 tblsp
Saffron – few strands soaked in lukewarm water
Mint Leaves – 3 tblsp, chopped
Salt as per taste

For the Masala:
Poppy Seeds – 4 tblsp
Melon Seeds – 2 tblsp
Sesame Seeds – 2 tblsp
Fennel Seeds – 1/2 tsp
Cumin Seeds – 1 tsp
Coriander Seeds – 1 tblsp
Green Chillies – 3

1. Grind all the masala ingredients and keep aside.
2. Heat the ghee in a heavy-bottomed pan.
3. Fry the rice for 2 to 3 minutes.
4. Mix in the green mangoes and stir gently.
5. Add 3 cups of water and cook the rice covered with a lid on low fire till the rice is half cooked.
6. Mix the masala with the sweet mango pieces. Mix gently.
7. Add this to the half-cooked rice and stir very gently.
8. Add the saffron and mint leaves and stir.
9. Add 1/2 cup of water to the rice mixture.
10. Cover with a lid and seal the lid with foil.
11. Cook on very low heat till the rice is cooked.
12. Wait for 5 to 10 minutes before opening the lid.
13. Serve hot.
