Oysters with Black Bean Sauce

Oysters – 24, shucked
Olive Oil – 1 tblsp
Root Ginger – 4 thin slices
Garlic Cloves – 2, crushed
Black Bean Sauce – 2 tblsp
Spring Onions – 4, diagonally sliced
Chinese Rice Wine – 1 tblsp
Sesame Oil – 1/2 tsp

1. Heat oil in a nonstick pan over high heat.
2. Add the ginger and garlic.
3. Stir fry for a few seconds until lightly browned.
4. Add the black bean sauce and the oysters.
5. Cover the pan with a lid and cook the oysters over high heat for 30 seconds.
6. Remove the lid and add the spring onions, rice wine and sesame oil.
7. Stir and serve at once.
