Ingredients:
Chicken Breast – 500 gms, cut into strips
Olive Oil – 1 tblsp
Garlic – 2 cloves, crushed
Lemon Grass – 2 tblsp, finely chopped
Fresh Root Ginger – 2 tsp, finely chopped
Onion – 1, sliced
Tomatoes – 300 gms, chopped
Asparagus Spears – 350 gms, halved
Tamari Sauce – 1 tblsp
Black Pepper – 1/2 tsp, ground
Thai Basil Leaves – handful, to garnish (or regular basil leaves)
Method:
1. Heat oil in a nonstick pan over high heat.
2. Add garlic, lemon grass, ginger and onion.
3. Stir-fry for about 5 minutes.
4. Add the chicken strips and stir-fry for about 6 minutes until browned and cooked.
5. Add the tomatoes, asparagus, tamari sauce and pepper.
6. Stir-fry for 2 to 2 1/2 minutes.
7. Garnish with basil leaves.
8. Serve hot.
