Brinjals – 100 gms
Baby Neem Leaves – handful
Oil – 1 cup
Turmeric Powder as per taste
Salt as per taste
1. Dice the brinjals and coat them lightly with salt and turmeric.
2. Heat oil to smoking.
3. Reduce heat and add the brinjals.
4. When they start to soften, add the neem leaves.
5. Fry till the leaves are crisp.
6. Remove and Serve.
