Sardine Sandwich


Bread Slices – 6
Butter – 25 gms
Sardines – 2, drained and mashed
Onion – 1, small, chopped finely
Juice of 1 Lime
Cucumber – 1/2, cut into thin slices
Tomatoes – 2, sliced thinly

1. Apply butter to the bread slices.
2. To the mashed sardines, add the onion and lime juice.
3. Spread the filling on each buttered slice.
4. Top with cucumber and tomato.
5. Add a second slice of bread on top.
6. Trim the crust and cut into triangles.
7. Garnish with extra cucumber and tomato slices.
8. Serve.
