Spiced Olives

Fennel Seeds – 1 tsp
Cumin Seeds – 1 tblsp
Coriander Seeds – 1 tblsp
Olive Oil – 1/3 cup
Garlic Cloves – 3, finely sliced
Dried Red Chilli Flakes – 1 tblsp
Lemon Zest – 1 tblsp, finely grated
Mixed Olives – 500 gms
Parsley – 1/2 cup, finely chopped

1. Place fennel, cumin and coriander seeds in a pan over medium heat.
2. Toast them until lightly browned and fragrant.
3. Heat oil in a small pan until just warm.
4. Add garlic, chilli flakes, toasted seeds and lemon zest.
5. Stir over medium heat for 2 minutes.
6. Place olives in a bowl.
7. Pour warmed oil over and stir well.
8. Cover with cling wrap and leave at room temperature to marinate for a few hours before serving.
9. Stir occasionally.
10. Garnish with chopped parsley.
11. Serve.
