Ingredients:
Minced Lamb – 500 gms
Chana Dal – 1 tsp
Dried Red Chillies – 2 to 3
Green Chillies – 2 to 3
Black Cardamoms – 2 to 3
Bay Leaves – 2
Cinnamon – 2 to 3 one inch sticks
Cloves – 4
Eggs – 1 to 2, whisked
Salt as per taste
Almonds – handful, slivered
Refined Oil
Method:
1. Boil the minced lamb with chana dal, red chillies, green chillies, whole spices and 5 cups of water.
2. Boil till water evaporates.
3. Remove red chillies and whole spices. Discard.
4. Grind the minced lamb to a smooth paste.
5. Add eggs and salt.
6. Knead well.
7. Add the almonds.
8. Take a spoonful of the mixture and shape into flat round cutlets.
9. Deep fry these cutlets in hot oil over moderate heat till crisp and brown on all sides.
10. Remove and drain excess oil.
11. Serve hot.
