Ingredients:
Oil – 2 tblsp
Onion – 1 1/2 tsp, sliced
Rice Water – 2 cups
Coconut Milk – 1 tblsp
Carrot – 1 tblsp, chopped
Baby Corn – 1 tblsp, chopped
Broccoli – 1 tblsp, chopped
Coriander Leaves – 1 tsp, chopped
Salt as per taste
Boiled Rice – 2 tblsp, for garnish
Spring Onion – 3/4 tsp, chopped, for garnish
Method:
1. Heat oil in a pan.
2. Add the onion and stir-fry over moderate heat till brown.
3. Add all the ingredients except coconut milk and garnishes.
4. Bring to boil.
5. Lower heat and simmer for 4 minutes.
6. Remove pan from heat.
7. Add the coconut milk.
8. Adjust seasoning.
9. Garnish with boiled and spriing onions.
10. Serve at once.
Tip: After adding coconut milk, do not reheat.
