Coriander Leaves – 2 tblsp, chopped
1. Cut the cauliflower into florets.
2. Peel and cube the onions and the potatoes.
3. In a large saucepan, combine the vegetable stock, cauliô€ˆower, onions, potatoes, and jalapeno peppers.
4. Bring to a boil.
5. Then reduce the heat and simmer for 6 to 8 minutes until the vegetables are tender.
6. Garnish with the coriander leaves.
7. Serve hot.
