Aloo ki Kheer

Potatoes – 1, large
Milk – 500 ml
Sugar – 2 to 2 1/2 tblsp
Powdered Cardamoms – 2
Butter or Ghee – 1/2 tblsp
Raisins – 1/2 tblsp
Rose Water – 1 tsp
Silver Varak for decoration
Pistachios – 3, finely slivered, for decoration

1. Peel and finely grate the potatoes.
2. Keep them in water. This is to ensure the potatoes do not get discoloured.
3. Boil milk.
4. Add sugar and cook till milk is thick and reduced by half.
5. Add cardamom powder and fry potatoes in butter lightly.
6. Add the potatoes to milk and boil.
7. Remove from heat when the potatoes are soft and cooked.
8. Mash them well.
9. Add raisins and cook for 5 more minutes.
10. When it is cool, add rose water.
11. Decorate with silver varak.
12. Garnish with pistachios.
13. Serve.
