Bangaladumpa Vepudu (Andhra Potato Fry)

Ingredients:
Potatoes – 1 kg, boiled, peeled and cubed
Urad Dal – 4 tsp
Curry Leaves – 10 to 15
Cumin Seeds – 1 tsp
Mustard Seeds – 1 tsp
Onion – 2, medium, finely sliced
Oil – 1/2 cup
Green Chillies – 7 to 8
Turmeric Powder – 1/2 tsp
Salt as per taste

Method:
1. Fry the urad dal, mustard seeds and cumin seeds in a pan.
2. Add curry leaves and fry till brown.
3. Add onions and green chillies.
4. Fry till brown.
5. Add the potatoes along with turmeric powder.
6. Mix together.
7. When the potatoes are well coloured with turmeric and lightly browned, add salt.
8. Remove and serve hot.

I thought this was really good. This was my first attempt at potato fry, and it turned out well. I did add some ginger garlic paste to the onions before I added the potatoes, and I let the potatoes cook for a very long time to get nice and brown, but if you cook them for a long while you have to be careful and turn the potato pieces over gently so that they don’t break apart too much. I will definitely make this again.
