Fried Bananas

Rice Flour – 350 gms
Water – 250 ml
Desiccated Coconut – 50 gms
Plain Flour – 3 tblsp
Sugar – 3 tblsp
Sesame Seeds – 2 tblsp
Baking Powder – 2 tsp
Salt – 1 tsp
Peanut Oil or Corn Oil – 1 1/2 lires, for deep frying
Small Bananas – 450 gms, slightly green and quartered

1. Mix together all the ingredients, except oil and bananas, in a bowl to a batter consistency.
2. Heat the oil in a deep frying pan.
3. Dip the banana pieces into the coconut batter.
4. Deep fry in hot oil until brown but not dark, for about 3 minutes.
5. Turn over and cook for another 2 minutes.
6. Remove and drain.
7. Serve at once.
