Roast Chicken with Soup Noodles Recipe

Egg Noodles – 200 gms
Chicken – 250 to 300 gms, cooked and shredded
Spinach or Lettuce – a few leaves
Small Onion – 1, chopped
Ginger – few slices, shredded
Chicken Stock – 1/4 cup
Soya Sauce  4 tblsp
Oil – 1 tblsp
Sesame Oil – 1 tsp
Salt as per taste
Pepper as per taste

1. Soak noodles in hot water for 8 to 10 minutes.
2. Drain well and spread out to cool and dry.
3. Boil the chicken with the small onions, 5 to 6 cups of water, chicken stock and ginger.
4. Add the soya sauce, lower the heat and simmer for 25 minutes.
5. Add the noodles, salt and pepper.
6. Add the lettuce and simmer for 2 minutes more.
7. Garnish as desired.
8. Serve hot.
