Crisp Seafood on Noodles

Rice Noodles – 100 gms
Seafood – 500 gms, diced and cooked
Capsicum – 1, cut into thin long strips
Onion – 1, cut into thin slices
Chinese Pickle (optional)
Red Chilli – 1/2
Ginger – few slices, shredded

For the Sauce:
Soya Sauce – 1 1/2 tblsp
Chicken Stock – 1/4 cup
Water – 1/2 cup
Sherry – 2 tsp
Sugar – 1 tsp
Salt as per taste
Pepper as required

1. Mix all the sauce ingredients in a bowl.
2. Heat the oil and deep fry the noodles, a handful at a time.
3. Drain.
4. Do not let them get dark.
5. Arrange the noodles on a serving plate.
6. Drop handfuls of seafood into the hot oil and remove after 60 seconds.
7. Place on the noodles.
8. In 3 tblsp of oil, stir-fry the capsicum, onion and ginger.
9. Add the sauce and bring it to the boil.
10. When it becomes thick, add the pickle and chilli.
11. After 60 seconds, pour ths over the noodles and seafood.
12. Garnish with parsley and sliced cucumber.
13. Serve.
