6 hard-boiled eggs
1 clove garlic, minced
1 small onion, sliced
1 tablespoon oil
1/2 teaspoon salt
pepper to taste
1 tablespoon curry powder
1 cup coconut milk
1 small sweet pepper
Peel the hard-boiled eggs and cut into quarters.
Fry onion and garlic in oil until golden.
Add the curry powder, salt, and peppers.
Mix well and gradually add the coconut milk and then the chopped sweet peppers.
Cook until it thickens.
Remove from heat and add the cooked eggs.
