Vegetable Fuyong


Eggs – 6
Cabbage – 1 cup, shredded
Mixed Vegetables – 1 cup
Mushrooms – 4 to 6, finely sliced
Onion – 1
Spring Onion – 1/4 cup, finely sliced
Oil – 2 tblsp
Salt as per taste

1. Heat the oil in a frying pan.
2. Add the onion and saute till translucent.
3. Cut the vegetables into slivers and add to the onion.
4. Saute till done but still crisp.
5. Add the cabbage and mushrooms.
6. Stir fry for 2 to 3 minutes.
7. Whisk the eggs till fluffy.
8. Add salt and pour it over the vegetables.
9. Allow it to set and lower heat.
10. Once set, turn it over and let the other side cook till deep golden brown.
11. Serve immediately.
