Stir-Fried Chicken Noodles

Ingredients:
Rice Noodles – 500 gms
Oil – 3/4 cup
Garlic – 10 flakes, chopped
Green Chillies – 6, chopped
Lemon Grass – 30 gms, chopped
Galangal – 30 gms, chopped
Chicken – 125 gms, julienned
Spring Onions – 175 gms, cut into strips
Basil Leaves – 20 to 30, chopped
Fish Sauce – 2 tbsp
Oyster Sauce – 4 tsp
Soy Sauce – 1 tsp

Method:
1. Soak the rice noodles in water for 25 minutes.
2. Drain and keep aside.
3. Blanch the chicken and keep aside.
4. In a kadai, heat the oil and add the garlic, green chillies, lemon grass and galangal.
5. Saute for a few minutes and then the chicken.
6. Saute further for a few seconds and stir in the remaining ingredients.
7. Mix well and toss on high heat for a few seconds.
8. Remove and serve hot.
