Red Curry Rice

Ingredients:
Basmati Rice – 1 cup
Oil – 2 tbsp
Red Curry Paste – 1 tbsp
Green Coriander – 4 to 5 tbsp, chopped
Water – 2 1/2 cups
Soy Sauce – 1 1/2 tbsp

Method:
1. Heat the oil in a large pan.
2. Add the rice and fry until golden brown for about 4 minutes.
3. Stir occasionally.
4. Add the red curry paste and fry for 1 minute.
5. Add the green coriander, water and soy sauce and bring to a boil.
6. Now turn the heat to very low and cook covered for 10 minutes.
7. Remove from the heat.
8. Allow the rice to stand for 5 minutes before serving.
