Ingredients:
Steamed Rice – 600 gms
Chicken – 125 gms
Pineapple – 125 gms, chopped
Oil – 3/4 cup
Garlic – 4 to 5 flakes
Green Peas – 125 gms
Spring Onions – 100 gms, chopped
Raisins – 2 tbsp
Soy Sauce – 2 tsp
Salt as per taste
Pepper as per taste
Sugar – a pinch
Cashewnuts – 50 gms, crushed
Method:
1. Blanch the chicken and keep aside.
2. Heat the oil in a kadai.
3. Add the garlic and saute for a few minutes.
4. Mix in the green peas, spring onions, pineapple, chicken and raisins.
5. Toss for a while.
6. Add the steamed rice, soy sauce, salt, pepper and sugar. Mix well.
7. Remove from the heat.
8. Garnish with cashewnuts.
9. Serve hot.
