Stir Fried Mushrooms Recipe

Mushrooms – 600 gms, cut into quarters
Cashewnuts – 250 gms
Oil – 3/4 cup
Garlic – 4 tsp, chopped
Onions – 125 gms, cut into discs
Capsicums – 100 gms, cut into discs
Red Chillies – 4, dry, roasted
Spring Onions – 125 gms, chopped
Green Chillies – 2, chopped
Salt as per taste
Pepper as per taste

1. Blanch the mushrooms and keep aside.
2. Fry the Cashewnuts till golden brown.
3. Heat the oil in a kadai.
4. Saute the garlic.
5. Add the remaining ingredients and toss on high heat for a few minutes.
6. Add a little stock if required.
7. Serve hot, accompanied by steamed rice.
