Pumpkin with Chilli and Garlic Recipe

Pumpkin – 500 gms, peeled, thinly sliced
Oil – 3 tbsp
Onion – 1, chopped
Garlic Cloves – 2, crushed
Eggs – 3
Green Chilli – 1, deseeded, chopped
Fish Sauce – 2 tsp

1. Heat the oil in a large frying pan.
2. Add the pumpkin, onion and garlic and fry over moderate heat till the pumpkin is soft, stirring occasionally.
3. Beat the eggs, green chilli and fish sauce together and pour the pumpkin.
4. Cook covered till the egg is set.
5. Cut into wedges and serve hot.
