Lamb in Green Curry Recipe

Lamb – 800 gms
Oil – 3/4 cup
Green Curry Paste – 1/2 cup
Small Brinjals – 120 gms
Kaffir Leaves – 4 to 6
Red Chillies – 4
Basil Leaves – 6 to 8
Coconut Milk – 1 cup
Fish Sauce – 3 tbsp
Sugar – 4 tsp
Salt as per taste

1. Cut the lamb into slices.
2. Heat the oil in a pan.
3. Add the green curry paste along with the sliced lamb.
4. Saute for 2 to 3 minutes.
5. Add the brinjals, kaffir leaves, red chillies, basil leaves, coconut milk, fish sauce and sugar.
6. Cook on low heat for 15 minutes (if required add a little chicken stock).
7. Add salt to taste.
8. Serve hot with steamed rice.
