Grilled Whole Chicken Recipe

Ingredients:
Chicken – 1 1/2 kg
Lemon Grass – 8 tsp, chopped
Galangal – 8 tsp, chopped
Coriander Root – 1/4 cup
Garlic – 8 tsp, chopped
Fish Sauce – 3 tbsp
White Pepper Powder – 1 tbsp
Soy Sauce – 4 tsp
Kao Wine – 4 tsp
Sweet Chilli Sauce – 4 tbsp

Method:
1. Mix all the vegetables along with fish sauce, white pepper powder, soy sauce, Kao wine and sweet chilli sauce.
2. Blend to make a smooth paste.
3. Cut the backbone in the prepared paste and flatten.
4. Marinate the chicken in the prepared paste and keep aside for 4 to 5 hours.
5. Skewer the chicken and grill over a charcoal grill until it is cooked.
6. Remove from the skewers and serve hot, accompanied by steamed rice and traditional Thai soup with prawns.
