Seafood with Chilli and Basil

Ingredients:
Mussels – 16, in shells
Squids – 250 gms, cleaned, cubed
Oil – 1 tbsp
Garlic Cloves – 2, chopped
Spring Onions – 6, sliced
Basil Leaves – 20, fresh
Fish Sauce – 2 tbsp
Soy Sauce – 1 tbsp
Red/ Green Chilli – 1, deseeded, chopped
Brown Sugar – 1 tbsp
Prawns – 200 gms, peeled, uncooked

Method:
1. Scrub the mussels, remove any dirt or beard and rinse well.
2. Heat the oil in a large saucepan.
3. Add the garlic and spring onions.
4. Fry for 1 minute.
5. Add the remaining ingredients except the squids and prawns.
6. Cook covered for 5 to 6 minutes.
7. Discard the mussels that do not open.
8. Add the squids and prawns.
9. Cook for 3 to 4 minutes or till they are cooked.
10. Serve hot.
