Chicken – 600 gms, boneless
Curry Powder – 8 tsp
Garlic Cloves – 3 tbsp
Coriander Root – 8 tsp
Coriander Seeds – 1 tbsp
White Pepper Powder – 4 tsp
Fish Sauce – 1/2 cup
Lemon Grass – 8 tsp, chopped
Kha – 5 tsp, chopped
Cumin Seeds – 4 tsp
Peanut Sauce – 1/2 cup

1. Cut the chicken into 2 inch broad strips.
2. Make a paste by mixing together the curry powder, garlic cloves, coriander root, coriander seeds, white pepper powder, fish sauce, lemon grass, Kha and cumin seeds.
3. Marinate the chicken strips in the prepared paste for 4 hours.
4. Skewer the chicken strips on bamboo sticks and grill/roast till the chicken is done.
5. Remove from heat and serve hot, on the sticks themselves.
6. Serve with peanut sauce.
