Pizza with Herbed Rice, Spring Onion and Feta Cheese


Wheat Pizza Base – 1

For the Topping:
Basmati Rice – 1 cup
Olive Oil – 2 tblsp
Spring Onions – 3
Green Chillies – 2
Mixed Herbs – 1 tblsp
Feta Cheese – 1 cup

1. Heat the oil and add the spring onions and fry for 30 seconds adding the green chillies.
2. Mix in the herbs and the rice and toss gently.
3. Place this topping on the pizza base and top with the cheese.
4. Grill or place in an oven for 7 to 8 minutes.
5. Serve.
