Kathirikai Chops

Kathirikai – 500 gms
Coconut – 1/4
Cinnamon – 2 small sticks
Ginger – 1 inch piece
Garlic – 2 to 3 cloves
Green Chillies – 3 to 4
Oil – 100 ml
Onions – 1/2, chopped
Tomatoes – 1/2, chopped
Salt as per taste

1. Wash and cut the brinjal like a flower without removing the stem.
2. Grind together the coconut, ginger, garlic, cinnamon and green chillies to a fine paste.
3. Stuff the brinjal with the ground paste.
4. Heat a kadai on moderate flame.
5. Add oil and saute the onions and tomatoes. Add salt to taste.
6. Add brinjal and fry for 1 to 3 minutes.
7. Sprinkle water and cook till it becomes soft.
8. Serve hot.
