Ingredients:
Carrot Juice – 250 ml
Tomatoes – 4, skinned, deseeded and roughly chopped
Lemon Juice – 1 tbsp
Fresh Parsley – 25 gms
Fresh Root Ginger – 1 tbsp, grated
Ice Cubes – 6
Water – 125 ml
Chopped fresh Flat Leaf Parsley
Method:
1. Put the carrot juice, tomatoes and lemon juice into a food processor and process gently until combined.
2. Add the parsley to the food processor along with the ginger and ice cubes.
3. Process until well combined, then pour in the water and process until smooth.
4. Pour the mixture into tall glasses and garnish with chopped fresh parsley.
5. Serve at once.
