Hot Boiling Water – 250 ml
Dried Apricots – 125 gms
Orange Juice – 4 cups
Natural Yogurt – 2 tbsp
Dark Brown Sugar – 1 tsp
1. Put the apricots in a bowl and pour the boiling water over them.
2. Leave to soak overnight.
3. In the morning, put the apricots and their soaking into a food processor and process until pureed.
4. Add the orange juice to the apricots in the food processor, and process until combined.
5. Pour into glasses and top with 1 tablespoon of yogurt and a sprinkling of brown sugar.
